Food - Eggplant Pizza and Zucchini Fries

I am talking about thinking outside of the box now.

I often order pizza without cheese or the added butter on the crust. The deli knows that I want a veggie wrap without the honey mustard. I ask for a veggie fried rice without egg and get the steamed rice and green beans without MSG.

Maybe you don't remember an a very old slogan: "Hold the pickles. Hold the lettuce. Special orders don't upset us. All we ask is let us serve you your way." Times change and maybe the servers don't really want to serve you your way, but a friendly smile and sincere thanks from a repeat customer (along with a nice tip) will go a long way.

Yesterday I saw a simple recipe for zucchini fries, cut kind of thin, with just a bit of oil (and of course salt, which I completely ignore unless I plan to share with my Indian friends who have a saying that without salt, just put it in the garbage).

Today I found egglant pizza. Both were raw recipes and meant to cook for awhile in a dehydrator so the veggies or at least their enzymes would still be "live." I don't have a dehydrator or food processor (just a Blendtec and Osterizer), but I am not above actually using my oven.

So, be adventurous and have it your way. Think outside the box and put your peanut butter on apple slices and/or celery. (Just pick up the naural peanut butter that only lists peanuts in its ingredient list or at least less than 1-2 % salt.) Make sweet potato and/or zucchini fries for less of a sugar influx. Put your own favorite veggies on top of 3/4 inch circles of zucchini. Make your own soups with celery, tomato, onions, carrots, potatos, beans, corn, and whatever seasonings you like. (Just watch out for blends where everything is premixed and may include lots of salt.) Buy bags of some frozen vegetable blends (where the sodium count stays below the calorie count) and toss them in for the last half hour of cooking.

Buy dried beans and different healthy grains, such as brown rice, quinoa, and barley. (Red Mill is usually gluten-free and avoids wheat cross-contamination, so check them out.) They make great additions to stews along with lentils, which need no soaking and cook quickly due to their small size.
