I cook like my Grandma Mid did. I'd ask her for her recipes because her meals were so delicious, and she'd tell me there wasn't one. She said she cooks "by gosh and by golly". I asked her what that means, and she told me she just makes them up as she goes along.
That's the way I cook, too. Always creating new recipes. People ask me what it's called, and I have to tell them there isn't a name for it because I just make them up. I've been teaching my son how to cook this way, too, and how to use a variety of ingredients and cut them up in different ways, and how to use different seasonings, as well as how to make sauces.
So, when my son tells me he really enjoyed something new I've come up with, I need to write it down. I thought I'd share the recipe to the meal we made last night.
Here's what we used in our dinner last night:
- 3 whole chicken legs -- boiled in 4 cups of spring water. Then cooled and removed from the bones. Then cut up into bite size pieces.
- 3 cups of chicken broth saved from the boiled chicken.
- 8 strips of thick meaty bacon, sliced and diced into small pieces. Then stir fried for 10 minutes in an electric skillet with 1/2 stick real butter, lots of dried parsley, and natural sea salt (we used Redmond Real Salt with minerals).
- 8 ounces white mushroom buttons (no stems) cubed. Add to bacon and butter when bacon and stir fry for 10 minutes.
- Add the chicken broth to the mixture because the potatoes need the liquids to cook in.
- 6 very small new potatoes or young potatoes sliced thin, approx 1/4 inch or less. We peeled the skin off the golden potatoes, but kept the skin on the red skin potatoes. Add to bacon and mushrooms. Cook for 10 minutes and keep a lid on the skillet between stirring from now on.
- Add 2 sticks celery finely chopped.
- Add 2 Zucchini peeled and diced.
- Add 1 small Vidalia Onion cut into thin wedges.
- Create mustard sauce. Mix 1/4 cup Dry Sherry, 2 TBSP Beaujolais wine, and 2 TBSP Yellow Mustard (prepared mustard, not dry mustard). Add to the other ingredients in skillet.
- Keep the bacon and vegetables stirred frequently. Add more chicken broth if necessary as the vegetables will continue to soak it up. Keep covered.
- 1 large bundle of green onions -- washed, peeled, and chopped. (After cutting off the root and 2 inches off the end of the green leaves, peel off the outer most leaf clear down to where the root was. That leaf is the "skin" of the green onion and you shouldn't eat it.) Chop all of the white and green part of the green onions. Save.
- When the sliced potatoes are finally cooked through (which takes about 20 minutes from the time you have added them and the broth), add the chicken and green onions. Stir and cook on low for another 10 to 15 minutes so that the chicken is saturated with all flavor from the bacon and mustard sauce.
We cooked the meal in stages as we prepared the ingredients for each stage. Some ingredients take longer than others to cook. Therefore, they are added in at different times. With the two of us enjoying each others company, preparing the ingredients and cooking together, it was not only a fun family time of talking and kidding around, it made all the cooking go faster. From beginning to end of food prep and cooking, the entire meal took just over 1 hour because of needing to boil the chicken thoroughly first before shredding or cutting it.
My son and I enjoy cooking together. I also find it important to build cooking skills into his life. I won't always be around. I also want him to enjoy this type of creativity among his joys in life.
