Greek Easter Cookies Recipe ( Requested by Amber8)

I\'m translating this from a Greek cook book so i\'ll do my best to use the correct english terminology


You will need:

  • 150g (0.3lbs - 3/4 tea cup) of butter
  • 150g (0.3lbs -3/4 tea cup) of sugar
  • 4 eggs
  • vanilla (we buy it in small doses of powder here) u don\'t need a specific amount, you decide how much you want to use , it just for the scent anyway)
  • 1 1/2 dessert spoon  of carbonate ammonia (google translate not sure if this is the correct term - it\'s used so the cookies inflate to -get bigger- when baking)
  • 650g (1.4lbs - 4 1/2 tea cups) of flour
  • 1/2 dessert spoon  of salt
  • A bit of olive oil


Preparation:

 

In a basin, mash the butter with your hands until it softens and becomes like creme.

Then add the sugar, 2 of the eggs, the vanilla,  and the ammonia (we\'ve made that into powder first), and mash again , now with a spatula or in the mixer for about  8-10 minutes.

Then add the flour and the salt and mash untill it becomes a dough , like bread dough.

Pre heat your oven. Spread some olive oil on a sheet pan ( you can use some oven paper instead if you want, but the oil is better) .

 Now take a small chunk of dough in your hand, mash it a bit and shape it anyway you want to, and place it in the sheet pan. Do the same for the rest of the dough. Try not to make them too big cause they will double their size when baked, so keep enough space between each one as well.

Once your sheet pan is full, in a small bowl , beat the albumen ( not the yolk but the transparent part) of the other two eggs a bit , and spread a thin layer of that over the cookies.

Place the sheet pan in your oven and bake in high temp until they get golden brown.

Once you take the sheet pan out off the oven, let the cookies cool down before taking them out off the pan, because they will still be soft and will easilly break.

When they cool down , (they should have become crunchy and crispy by now) take them off the pan and place them in your mouth...err cookie jar i meant or bowl or plate or wherever you please..
